Crock Pot Pork and Apples

Well, well, well. Here we are in 2013. I feel like it?s going to be good?really good. I think it?s safe to say that I have a lot going on this year and I?m excited to get going! Adam and I are still in Texas visiting with friends and head back to California tomorrow. We?ve both been gone for three weeks and I can?t wait to get back in the normal groove of things. My body is itching for some yoga {or, let?s be honest? any physical activity at all} and some green juice after all these holiday shenanigans. I?m sure many of you feel the same way!

I like to follow up the holidays with a nice easyyyyyyy dinner in the crock pot.

I made this actually before I left for Christmas, but I?m sure I?ll make something else like it again tomorrow when I get home. After spending so much time in the kitchen and entertaining others {Morgan and I have been cooking up a storm this past week!}, it?s just really nice to have a low stress meal like this that literally takes five minutes of prep time.

The great thing about this dish is that it?s easy, comforting and delicious. I love the flavor combination of the apples, onions, brown sugar and spicy mustard with the pork. It?s a keeper.

The bad thing is that it?s really not photogenic. Please forgive me. I tried everything in my power to make this dish look as delicious as it tastes, but no cigar. I hope you?ll just take my word for it.

Crock Pot Pork and Apples

serves 4-6

Print this Recipe!

Ingredients:

1.5 lbs pork chops

3 sliced apples {gala works nice}

1 yellow onion, thinly sliced

2 tbsp brown sugar

1 tbsp spicy mustard

salt and pepper to taste

Directions:

Place the pork chops at the bottom of your crock pot. Cover with remaining ingredients, place the top on and cook on low for about 6 hours. Season with additional salt and pepper to taste right before serving.

Time:

active time ? 5 minutes

total time ? 6 hours
